You can go around any of the lakes around AZ.  Depending how your truck is set up you can get out into the middle of no where and no one around for the entire weekend.

You can also look up at mormon lake outside of Flagstaff.

Ben (coatimundi01) is the one to talk to about camping near water, he is a huge fishing guy too.

Sheep's Bridge on the Verde River is a good area to hang out/camp at, and in dry conditions, it is driveable in 2WD:

Also, Childs Power Plant is right off the river and although the road is rough near the end should be fairly doable by 2wd fronty.  Not many people down there mid week, but on the weekend you will have a couple make it to the river area.  There is also a natural hot springs a little down the river.Map (https://maps.google.com/maps?saddr=Phoenix,+AZ&daddr=Verde+Hot+Springs,+Arizona&hl=en&ll=34.403511,-111.839447&spn=0.932508,1.234589&sll=34.357963,-111.701088&sspn=0.058314,0.077162&geocode=Fblh_gEdy-JR-SnLeaFQ7RIrhzGsG0o1-MdpjA%3BFWs4DAIdU3FX-Sl5CH_OhlwshzHrJu4AdcKiqA&oq=phoenix&t=h&mra=ls&z=10)
